A higher rated player that sets-up a gambit probably did it on purpose. So I try to consider the positional compensation they will have, if I accept. Often the rating of a player affects my decision to accept or not a gambit, a draw, or even berserk a player.
Besides the actual rating, I find it useful to know the average opponent they play (1679.66) and the best win (2173) they had. The above ratings are my ratings from the browser extension: Lichess Custom Stats.
