When I create a position where one side has 2 bishops of the same color, and the other doesn't, then the position auto-finishes and says the game is over.

It's a dead draw. Of course the game is over then.
if mate is impossible lichess automatically gives draw, at least in simple cases where it is trivial to implement.
More interesting is that lichess adjudicates that as a draw even if bishops belong to different sides, but are of the same color squares. I'm interested what those simple cases are exactly.
KN vs K
KB vs K
KBB... vs K if bishops are of same color
KQ v KN if Q loses on time
KQ v KB if Q loses on time
KR v KB if R loses on time
These count as draw.
i once suggested to also add
KB vs KN
KB vs KB
KR vs KN if R loses on time
KNN vs K if K loses on time
but this got no support. So these positions count as losses.
